Coconut Almond Chocolate Ice Cream



I'm not sure how you feel about Almond Joy Candy Bars.  I personally LOVE them.  So I decided I wanted to make an "icecream" without all the bad things that come along with it.  I had coconut milk in the cupboard and after reading about good fats vs. bad fats I decided to go for it.  There were no leftovers.

Ingredients

1 can coconut milk
1/2 can lite coconut milk
1/4 cup unsweetened coconut flakes, lightly toasted
1 tbsp trader joe's coconut strips chopped
1 1/2 tbsp unsweetened cocoa powder
1/4 cup dark chocolate chopped
1/2 cup almonds chopped
1/4 cup maple syrup
1/4 cup chocolate syrup

Directions




In a sauce pan lightly toast the coconut flakes until a light golden brown.









Combine all the ingredients in a dish, except the chocolate and almonds.  If you have an ice cream maker, put this mixture in, and let it do it's thing.  If you don't have one, put the mixture in the freezer, check on it hourly and stir each time until softly set.  Once softly set, add chocolate and almonds then fold them gently into the ice cream.


This is such a wonderful alternative to traditional ice cream, I hope you'll find new ways to enjoy it.  Try adding pineapple instead of chocolate for a light and creamy pina colada ice cream.  Use your imagination and enjoy the refreshing treat.
