Gluten Free Turkey Minestrone

 

This is a fairly quick soup to put together.  I know, I know, it's summer and soup probably isn't at the top of your list, but this makes a hearty meal, as part of a soup and salad combo, packed full of healthy veggies and low-fat turkey.  Get it going and let it simmer for a simple but satisfying dish.  If you miss minestrone, fear not, we've substituted brown rice for the usual pasta found in this soup making it a lighter option for summer time dining.  As always, use organic ingredients whenever you can find them.

Ingredients

1/2 Onion, diced
2 Celery Stalks, chopped
2 Carrots, peeled and chopped
2 cloves garlic, minced
6 kale leaves, de-stemmed and chopped
1 cup mixed vegetables
2 cups cooked brown rice
1 lb ground turkey breast
4 cups low sodium organic chicken broth
1 cup tomato juice
2 bay leaves
1/2 tsp italian seasoning
3 Tbsp extra virgin olive oil

Directions



Add olive oil to a soup pot and heat on medium-high heat.  Add your onion, celery and carrots and cook until onions are translucent.  Add garlic and allow to cook for about a minute.








Add de-stemmed kale to pot and allow to wilt while stirring.









Push mixture to one side, add turkey and cook until turkey turns white.











Add mixed vegetables, chicken broth, tomato juice, bay leaves and seasoning and turn heat up.  Bring soup to a boil while stirring occasionally.







Turn the heat down to low, cover and let simmer for an hour or two.  About 10 minutes before you are ready to serve the soup add the rice and stir.
Makes 4 servings.
