Guacamole

Guacamole


There really is nothing like fresh guacamole.  It is as nutritious as it is delicious.  On a hot summer day, I'll have a serving of this for lunch with tortilla chips.  It takes minutes to make and really adds a lot to scrambled eggs, huevos rancheros or as an afternoon snack.  Make this for your next party and you will be the star.

Ingredients

3 Avocados, halved, seeded and peeled (organic preferred but not necessary)
1 lime, juiced
1/2 medium onion
1/2 jalapeno pepper
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced
1/2 teaspoon himalayan sea salt
1/2 teaspoon ground cumin
1/4 teaspoon cayenne

Directions




First up, cut the tomatoes in half and take out the seeds.









Next, do the same to the jalapenos.









Chop the tomatoes, jalapenos, onion, cilantro and garlic into small pieces (to your liking) and set aside.  Place the avocado meat in a bowl,  add the lime juice and mash until it reaches the consistency you like.  I keep mine fairly chunky.  Add the chopped ingredients and spices into the bowl and stir gently.  You can add a little more cayenne if you like it a bit spicy.  Let sit, covered, for as long as you can stand it.  Ideally at least an hour.  Serve with nut thins, tortilla chips, red or green bell pepper slices or over eggs.
